Mediterranean pork meatballs

I'm a big pasta fan but find whenever I have a meaty sauce I tend to use beef. So I decided to have a play with minced pork for a change and found that it makes really tasty, succulent meatballs. This was a big hit with the whole family and really easy to do.

It's a also great for making ahead and freezing in batches for a quick but delicious midweek meal.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 4 servings


For tomato sauce
1 onion, finely chopped
1 clove garlic, crushed
1 tbsp chopped basil
2 tbsp tomato purée
400g passata
Splash of Tabasco
Splash of Worcestershire sauce
Splash of balsamic vinegar
125ml red wine
1tbsp olive oil

For the meatballs
Half an onion, finely chopped
1 tsp tomato purée
Half tsp smoked paprika
1 tsp green pesto
450g minced pork
Salt and pepper to season
1 tbsp olive oil

300g spaghetti


Tomato sauce
Heat the olive oil and add the chopped the onion and garlic. Cook until soft but not browned.
Add the wine, balsamic vinegar, Tabasco, Worcestershire sauce and basil. Cook for 2 minutes.
Stir in the tomato purée and passata. Cook on a low heat for 30 minutes.

Pre heat oven to 180, 160 for fan ovens.
Heat the olive oil and add the chopped onion, cooking until soft.
Place the pork, pesto, tomato purée and smoked paprika in a bowl and add the cooked onions. Season with salt and pepper.

Use your hands to really bind the mixture together. Keep working the mixture for about 3 minutes to really bind the ingredients.

Split the mixture into quarters and then quarters again. Use your hands to roll the 16 pieces into balls and line them up on a baking tray.

Cook for 16 minutes and then add them to the tomato sauce.

Both the sauce and meatballs and cooked and ready to eat by this point but cooking them together for a further 10 minutes helps blend the flavours.

When the meatballs go into the sauce, put the spaghetti on to cook.
Drain the spaghetti, add to the sauce and meatballs, stir through and serve.
