Medu Vada - Indian Donut

Introduction - ‘Medu Vada’ is a delicacy of South India and is extremely popular not just in India but all around the globe and is served with steaming hot ‘Sambhar’.

Preparation Time: 120 minutes
Cooking Time: 20 minutes
Makes: 8 servings

1 cup Split Black Lentils (Urad Dal)
3 chopped green chillies
3 to 4 perppercorns (Kalimirch)
8 to 10 Curry Leave
1tsp grated Ginger
Coconut oil or any other refined oil for deep frying

Clean, wash and soak the black lentils (urad dal) in enough water for atleast 2 hours
Drain, add the green chillies, pepper, curry leaves and ginger and blend in a mixer to a smooth batter, adding little water
Add the salt and mix well and divide the mixture into 8 equal portions. Keep aside.
Wet your hand and take a portion of the mixture in your hand and make holes with your thumb
Heat oil in a kadhai, upturn your hand and drop the wada in oil.
Deep fry the wada till both sides turn golden brown in colour.
Repeat with the remaining batter to make 7 more medu wadas
