Melting Moments

Melting moments are a go to recipe for a seemingly impressive and invariably pleasing sweet treat.

The crumbly texture allied with the tasteful sweetness make these biscuits incredibly more-ish, so feel free to double the mixture - as I often do!



Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 20 servings

Ingredients
125g butter, melted
1/4 cup icing sugar
1/2 tsp vanilla essence
1/2 cup self raising flour
1/2 cup cornflour

Icing
1/2 cup icing sugar
2-3 tsp boiling water

Method
Preheat oven to 175C.
Beat butter and sugar together until creamy and light. Stir through vanilla essence.

Fold through the self raising and corn flour until a consistent and soft dough is formed.

Portion mixture and roll into walnut sized balls (you may need floured hands for this!) Stagger the balls across a lined baking tray so they have room to grow.

With a floured fork, flatten the balls before baking for 25 minutes. Remove and allow to cool.

Mix the icing sugar and water together in a bowl and spread across the flat side of a cooled biscuit. Sandwich with another biscuit and enjoy immediately!
