Mexican Rice Bake

Vegetarian recipes don't need to be complex or bland, and this dish is a perfect example of how tasty and easy veggie meals can be. It's easily thrown together and makes a truckload, so it's an ideal family meal when you're short on time and money.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 6 - 8 servings

Ingredients
1/2 brown onion
2 cloves garlic
2 chillies
5 - 6 button mushrooms
1 capsicum
1 tin Mexican beans (I use Coles brand)
1 tin diced tomatoes
1 1/2 cups rice
3 cups boiling water
2 tsp paprika
2 tsp cumin powder
2 tsp pepper
1/2 cup grated cheese

Method
Pre-heat oven to 180 degrees Celsius.
Combine water and rice in a large microwave-proof bowl and cook for 10 minutes in the microwave.
Dice onion, finely chop garlic and chillies and slice capsicum and mushrooms.
With a splash of oil, gently fry onion, garlic, chillies, capsicum and mushrooms in a large frypan until onion is browned and mushrooms have softened.
Stir in spices.
Add tinned beans and tomatoes. Simmer gently until rice is cooked.
Combine rice and contents of frypan in a large baking dish and top with cheese.
Bake for 10 minutes or until cheese has melted.
