Mexican Rice with Basa

This Mexican rice is a fast and easy dinner that is packed full of flavour. You can change the spices to suit your family, I often add chilli and use a green capscium instead of a red one depending on what is in my fridge at the time.


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients
1 onion, sliced thinly
1 red capsicum, deseeded and sliced thinly
2 cloves garlic , crushed
2 tbs oil
1 cup corn and/or peas
1 1/2 cups white rice
2 tsp smoked paprika
2 tsp ground cumin
1/3 cup tomato paste
3 1/2 cups vegetable stock
500 g basa, cut into bite sized pieces
salt and pepper, to season

Method
Heat the oil in a large saucepan over medium heat. Add the onion, garlic, capsicum and corn. Cook until the onion is soft.

Add the paprika, cumin and rice and stir to combine. Add the stock and tomato paste and bring to the boil.

Reduce heat, cover and simmer for 12 minutes. The rice will absorb the liquid.

Stir through the basa then cover and cook for 2-5 minutes until the basa is cooked.
Season with salt and pepper then serve.
