Mexican Rice with Chorizo

The perfect dinner dish, especially on a cold night. Very tasty and satisfying indeed.



Mexican rice, dinner, chicken, chorizo


Preparation Time: 20 minutes
Cooking Time: 31 minutes
Makes: 4 servings

Ingredients
1 small can of sweet corn, drained
2 chorizo sausages, chopped
2 chicken thigh fillets, chopped
1 red onion, chopped
1 capsicum, finely chopped
2 garlic cloves, crushed
1 tablespoon sweet paprika
1 cup medium-grain rice
1/2 cup dry white wine
1 cup tomato sauce
11/2 cups chicken stock
Coriander leaves, to serve

Method

Heat a frying pan over medium heat.

Add chorizo sausages and cook until golden brown,

Transfer sausages to a bowl.

Add chicken to the pan and cook through, stirring occasionally.

Transfer to a plate.

Add the onion, capsicum, corn and garlic to the pan and cook, stirring until onion softens.

Add the paprika and cook, stirring, for 1 minute.

Add the rice, wine, tomato sauce, chicken stock, chorizo and chicken and bring to the boil.

Reduce heat to low and cook, loosely covered with foil until rice is tender and liquid is absorbed - approximately 15 minutes.

Remove from heat and set aside, covered, for 5 minutes to rest.

Garnish with coriander and serve immediately.
