Microwave Lime Curd or Lime Butter

Jars of lime butter

This is a delicious, easy recipe and you can use it in cakes (makes a delightful lime pie) or small pies, refer another of my recipes.

It is also nice to eat on toast, crumpets, as a cake or tart filling, hot sauce, in chicken dishes or even just off a spoon!

It is very easy to make in the microwave and I do not stand it in water like many recipes of this type.

Lime curd before putting lids on jars

Preparation Time: 15 minutes
Cooking Time: 6 minutes
Makes: 3 large jars

3 large eggs
125 g butter
1 cups sugar
cup lime juice (or lemon)
Zest from limes (optional)


Juice the limes.
I used an electric juicer as it gets more juice out than doing it by hand.

Beat the eggs in a microwavable glass bowl, and add the chopped butter

Beat eggs, add butter

Add the sugar and lime juice -I do not even strain the juice. Add the zest if using and I find it is nicer with zest as it is more tangy -use as much or as little as you want.

Ingredients now ready to microwave

Cook for 1 minute at a time and keep taking out and stirring after the one minute. My microwave is fairly strong, so you will need to judge this by the look.
As it gets nearer to being done, the lumps will disappear and it will get shiny.

This has been cooked total of 4 times

Then cook in 30 second intervals, about 3 times, stirring in between. You may get a few white spots however these seem to disappear when the curd cools.

Curd is done when it looks smooth & shiny like this

You could cook it the traditional way of standing it in water over a double boiler however I have not had a problem using this method as long as you keep stirring.

To sterilize the jars, I rinse them with water and microwave them for about 2 minutes making sure to tip out all water first.

Sterilized jars

Spoon or pour the curd into the jars.

It tastes as good as it looks!

When it is in jars, almost to the top, seal jars straight away.

Ready to put lids on

Store in fridge -they last for many months.

Never thought to make this in the microwave. Will have to give it a try next harvest!
that is a very easy recipe also! doesnt take long and always works - I do it with lemons, limes - slightly different recipe from memory -just as long as you do not micro it for long periods without stopping and stirring.

This looks great - been looking for an easy no-fuss recipe for curd for a while.
However, can I ask how many limes you zested for this curd? I want to have the zest in it as you did but I don't know how many limes to do - I'm guessing about 2 but it would be good if you could actually say how many you used.... thanks. :-)

Mike, I cannot specifically remember but I think it would have been one only, though you could do as much or as little as you like really! Though I think 1 is enough as you don't want heaps of it?
