Ingredients 250g Cream cheese, softened
150g Arnott's Marie biscuits (any similar brands can be substituted)
4 tbs brown sugar
3 tbs Baileys Original Irish Cream liqueur
Cocoa powder to serve
White chocolate shavings to serve
Preheat oven to 150°C.
In a blender blend the biscuits until fine crumbs form.
Melt the butter in the microwave and combine with the biscuit crumbs.
In a 12 cup muffin tray, place a cupcake case in each hole.
Distribute the biscuit mixture and press down firmly onto the cupcake case.
In a bowl beat the cream cheese, egg and sugar on medium for 3-4 minutes or until smooth.
Use a metal spoon to fold in the Baileys.
Spoon the cream cheese mixture into the cupcake cases.
Bake in the oven for 10 minutes and allow to rest at room temperature for 30 minutes to set completely.
Dust with cocoa powder and decorate with white chocolate to serve.
