Mini Baked Donuts with Vanilla Glaze

Baked donuts are much easier and faster to make than fried donuts, healthier too. If you don't have a mini donut pan, you can bake these in a normal donut pan or muffin tin but decrease the temperature to around 180 degrees C and increase the baking time to 20-25 minutes. Make sure the donuts are cooled to room temperature before dipping them into the glaze so the glaze doesn't melt.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 24 servings

For the donuts:
2 cups all purpose flour
2 tsp baking powder
2/3 cup granulated sugar
2 eggs, lightly beaten
1 tsp vanilla extract
1 cup milk
2 tbsp melted butter

For the glaze:
1 cup icing sugar
1-2 tbsp milk
1 tsp vanilla extract
food coloring (optional)


Preheat oven to 220 degrees C. In a large bowl, combine flour, baking powder and sugar.

In a medium bowl, combine eggs, milk, vanilla and butter.

Stir into the flour mixture, whisk until well combined.

Pour the batter into 2 non stick mini donut pans. Bake for 12-15 minutes. Let cool before glazing.

To make the glaze, combine icing sugar, milk and vanilla until the mixture is smooth.

Add a few drops of food colouring if desired.

Dip donuts into the glaze and let sit until the glaze hardens up.
