Mini Banana Cakes

This recipe makes a lovely and moist cake. It is great for school lunches as they freeze well or an enjoyable dessert.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 12 mini cakes

2 mashed over ripe bananas
1 tbs vanilla yoghurt
125g butter
3/4 cup sugar
1 tsp vanilla essence
1 egg
1 1/2 cups of S.R flour
1/4 cup milk

Preheat the oven to 180-200 degrees.
In a bowl, mash the bananas with a fork.
To this, stir in the yoghurt, vanilla essence and egg.
Melt the butter in the microwave.
To the bowl add the flour, butter, milk and sugar.

Stir until well combined.
To prepare the muffin tin, ensure it is well greased.
I like to cut short lengths of baking paper and put them into the tin so the cakes are easy to remove when baked.

Distribute the cake mixture into the cases and put in the oven to bake.

The cakes are ready when you can cleanly remove a skewer.
Using the baking paper tabs, remove the cakes and allow them to cool.

These cakes are delicious by themselves or you can jazz them up by pouring melted dark chocolate over the top.
