Mini Chocolate Cheesecakes

Can't decide between chocolate or cheese? This was created to satisfy both my chocolate and cheesecake cravings. Combine both into one and there you go. Perfect individual desserts for parties!

Preparation Time: 30-45 minutes
Cooking Time: 45-50 minutes
Makes: 12 servings

250g cream cheese
100g Arnott’s granite biscuits
60g butter, melted
2 eggs
1/3 cup caster sugar
150g of dark chocolate (baking)
1 tablespoon of thickened cream
1 tablespoon of sugar
˝ tablespoon of cocoa powder
Chocolate powder (hot chocolate/milo powder)

Preheat oven to 160°C and fill cupcake tray with cupcake liners.
Crush the biscuits using a food processor (or manually by hand using a rolling pin) to small crumb bits.
Work the crushed biscuits with butter, pressing the crumbs into the butter to form a crumb-like mixture.
Press the mixture into the base of each cupcake liner to form a 5mm base for the cheesecake.
Refrigerate for 15 minutes.
Melt the chocolate in a heatproof bowl over a pot of simmering water and stir until smooth.
Meanwhile, beat the cream cheese and caster sugar using an electric mixer until smooth.
Add eggs, 1 at a time, until it is combined with the mixture.
Mix the melted chocolate mixture into the cream cheese mixture with cocoa powder and stir until smooth.
Carefully pour the mixture into the cupcake liners. *Bake for 45-50 minutes and leave in the oven to cool with the door ajar.
Refrigerate for at least 2 hours (or overnight).
Sprinkle chocolate powder over mini cheesecakes before serving. Enjoy!
