Ingredients
250g Light Ricotta
½ Cup Fresh Mint Leaves
250g
Roasted Balsamic Strawberries
1 Teaspoon Vanilla Essence
½ Teaspoon Edible Gelatin
20ml Water
Method
Process the ricotta, mint leaves and vanilla essence until smooth.

Blend the ricotta, mint and vanilla essence in a food processor until smooth.
In a small cup, mix the gelatin and water. This gelatin does NOT contain any animal derivatives.
Add the gelatin into the ricotta and blend for 30-seconds. This will assist in setting the ricotta creams.
Refrigerate the ricotta cream for approximately 60-minutes.
Spoon the Mint Ricotta Creams into serving glasses until ¾ full.

Decorate the top of each Ricotta Cream with the Roasted Balsamic Strawberries.
Drizzle additional Balsamic Glaze over the Strawberries and Ricotta Creams and garnish with a mint leaves.
