Minted pea smash is one of my favourite breakfasts to order at a café. Usually paired with a side of poached eggs and ricotta I have made this recipe my own by using minted peas, feta and zucchini. Enjoy on toast, add some eggs or even stir through some pasta with olive oil for an easy sauce. If you don't have minted peas simply put in some fresh mint!
Ingredients 1 cup minted peas
2 tbsp. feta
1 handful fresh parsley
Salt and pepper
1/4 brown onion
Toast or pasta to serve.
In a hot oiled non-stick pan sauté the sliced onion until soft. Add in the chopped zucchini and stir. Finally throw in the peas and torn parsley and combine until warm. I like to squish the peas with the back of my spoon!
Season the mix to taste keeping in mind the feta is salty.
Tumble the warm mixture onto toast or pasta and scatter with creamy feta.
Enjoy this fresh and comforting meal for breakfast, lunch or dinner.
