Miso Poached Salmon Broth

This is one of my favourite 'long day and can't be bothered' meals. Super easy and quick to whip up, you also reap the benefits of a vastly nutrient dense meal, the salmon supplying a high dose of omega-3 fatty acids, nori adding a concentrated mother lode of vitamins and mineral, and miso being great for digestive health. With the fresh, light and exotic tastes you will be feeling well pampered!



Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 1 serve

Ingredients
1 tsp miso paste
1.5 cups hot water
1 salmon fillet, cut finely
1 sheet nori, shredded roughly
2 spring onions, coarsely chopped
50g rice vermicelli noodles
1 red chilli, chopped (if desired)

Method
Heat the miso paste and hot water on high in a saucepan.



When it has come to the boil, reduce heat to a simmer and add the salmon. Poach until almost cooked through.



Throw in all remaining ingredients, mixing well to break up the noodles. The salmon will be cooked through when ready, and the noodles will have softened. Serve immediately and enjoy!
