Ingredients 150g dark chocolate
2 egg yolks
1/4 cup caster sugar
2 tablespoons plain flour
Preheat the oven to 180C. Grease 4 oven-safe ramekins.
In a saucepan over medium heat, melt the butter and chocolate until smooth. Here, I used dark lindor chocolates because the dark cooking chocolate mysteriously vanished (into my stomach? hmm... Not sure why the Lindt didn't go first...), but regular dark chocolate works just the same.
The first part of the chocolate and butter, about to be melted with the rest!
In a mixing bowl, whisk together the eggs, egg yolks, and sugar until pale.
Carefully fold in the chocolate mixture and the flour.
Spoon the mixture evenly evenly between the 4 ramekins. Add extra ramekins if there is any leftover mixture (spares, yes!).
Bake for 12-15 minutes, or until the pudding tops puff up.
Allow the puddings to cool for about 5 minutes before serving. The centres should be deliciously molten.
