Monte Carlo Biscuits

Monte Carlo biscuits are named after the region of Monte Carlo in Monaco, Europe. Strangely enough these sweet, crunchy biscuits didn't originate from Monte Carlo or anywhere nearby. They were first made in Australia in 1926 and have become a family favourite ever since. Follow this recipe to make your own home made Monte Carlo biscuits to enjoy.



Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 12-15 servings

Ingredients
160g unsalted butter
1 tsp vanilla essence
2/3 cup brown sugar
1 egg
1 cup self raising flour
3/4 cup plain flour
1/2 tsp baking soda
1/2 cup desiccated coconut

Filling:
60g unsalted butter
1/2 tsp vanilla essence
150g icing sugar
2 tbsp milk
Raspberry jam



Method
Preheat oven to 180C, line a baking tray.

In a large bowl add the butter, vanilla essence and sugar together. Beat until well combined.



Add in the egg and beat until smooth.



In another bowl, sift together plain flour, self-raising flour and baking soda.



Add in the dessicated coconut.



Add the flour mixture into the butter mixture.



Using a metal spoon, combine the mixture until a soft dough forms.



Roll the dough into small balls and slightly flatten.



Bake for 7-10 minutes or until golden brown. Leave to rest for 5 minutes or until cool.

Meanwhile for the filling, in another bowl add the butter, vanilla essence, icing sugar and milk together. Beat until light and fluffy.



Take half a cookie and spread raspberry jam over the top, take another cookie and spread the icing mixture over it.



Sandwich together and enjoy.
