Ayurvedic dish is both detoxing and revitalising, making you feel warmed and wholly nourished at once.
The skin of the green mung bean is rich in minerals and aids in the cleansing of the digestive tract.
It can be served
with or
without the
rice, but I find the addition helps to bulk it out that little more and make it more substantial.
Cooking Time: 45 minutes
Makes: 2 servings
Ingredients
1/2 cup dry green mung beans, soaked overnight
1/2 cup brown rice
1/2 tsp ground turmeric
1 tsp ground cumin
1 tsp ginger, grated
4 cups water
Optional
Cracked black pepper
Chilli flakes
Method
Place the beans, rice and water in a small saucepan and bring to the boil. Reduce to a simmer and add the turmeric, cumin and ginger and continue to cook gently for 30-40 minutes.
Divide between two bowls and serve warm with cracked black pepper and chilli if desired.
