Mustard & Thyme Chicken Casserole

Another gorgeous winter warmer recipe that is set apart by its zesty mustard/thyme broth. Quick, easy and no mess guaranteed, whip this colourful dish up for the family and you will not be disappointed!

It is also a great dish for keeping in the freezer for those days when you don't have time to make something so healthy and satisfying!

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 6 servings

1 tbsp olive oil
2 cloves garlic, crushed
2 leeks, halved lengthways and sliced into 2cm chunks
4 celery sticks, roughly chopped
4 carrots, halved and cut into large pieces
3 bay leaves
2 large sprigs thyme
750ml chicken stock
2 tsp dijon mustard
500g chicken breasts, cut into bite sized chunks
2 spring onions, roughly sliced
400g can brown lentils, rinsed and drained

bunch coriander, roughly chopped (to serve)

In a large pot over a medium heat, warm the oil and add the garlic, leeks, celery and carrot and sauté for 5 mins.

Add the bay leaves, thyme, mustard and stock, and then simmer for another 5 mins.

Transfer the chicken to the pot and make sure the chunks are nestled down into the mixture. Cover and simmer for a further 15 mins.

Add the lentils and spring onions to the casserole, cooking until the chicken is just cooked through (should be very tender).

Serve immediately with sprinkle of chopped coriander.
