Nana's Peanut Oat Cookies

My Fiancee made these for me when we first started going out. They are a recipe his Nana made him as a child and have remained a favourite with good reason; they are super easy to make and very tasty.

Preparation Time: 7 minutes
Cooking Time: 15 minutes
Makes: 22 Biscuits

Ingredients
2 cups rolled oats
3/4 cup SR flour
1/2 cup firmly packed brown sugar
1 cup peanuts
1/4 cup melted margarine
1 egg

Method
Pre heat the oven to 160 degrees celsius.

Place all dry ingredients in a mixing bowl and stir to combine.

Add egg to melted margarine and stir well to break up the egg and thicken the margarine. (This is what binds to cookies together.

Add egg and margarine mixture to dry ingredients and stir to combine.

You can either use your hands to shape the cookies or use 2 soup spoons (1 to gather and the other to flatten and shape the mixture).

Place the cookies in a tray lined with baking paper and place in the oven for approx 15 minutes.

Allow cookies to cool before removing them from the baking paper.



Peanut Oat Cookies


Cookies will keep in an air tight container for up to 2 weeks--If they last that long.
