This is a nourishing and delicious soup that goes down well with grown ups and children alike! Made with either homemade chicken or turkey stock, it is packed full of goodness and will bring warmth to even the most wintry of days.
Ingredients 260 - 300g Turkey meat (can be breast or leg)
2 Potatoes (floury variety is best, not waxy)
Freshly squeezed lime juice (optional)
Peel the potatoes and wash the leeks. Chop roughly and place in a large pan.
Place the turkey on top of the vegetables.
Add salt and pepper to taste, if you wish.
Pour stock over all the ingredients. Nanna Banner always uses homemade stock such as this chicken stock as it will enhance the flavour and add extra nutrition but you can use any vegetable or poultry stock you have available.
For hob cooking, bring to the boil, then simmer for 1 hour.
For slow cooking, cook on low for 4 hours.
Remove the turkey and gently shred it.
Blend the remaining ingredients.
Return the turkey to the pan and heat gently. Add a small amount of freshly squeezed lime juice if you like.
Serve and enjoy!
