Nan's Raspberry Coconut Slice

This recipe I use to recreate in my head and take it along every year to my family picnic. Lots of family members remembered it but it was always not quite right (nothing's as good as nan use to make).
One year someone gave me a copy of the "original" recipe. Still not right, so I tweaked it a bit, it's better and here it is.

Preparation Time: 25 minutes
Cooking Time: 35 minutes
Makes: 20 - 25 servings

Ingredients
130gm butter
3/4 cup caster sugar
1 tsp vanilla essence
2 eggs seperated
1 2/3 cup self raising flour
1 1/4 cups raspberry jam
1 cup dessicated coconut
1/3 cup caster sugar (extra)



Served

Method
Turn the oven on to 180c
Cream the butter, sugar and vanilla until white, add the egg yolks one at a time and beat until smooth.

Add the flour and quickly but gently mix together. Do not over mix.

Press the dough into a prepared lamington tin (28cm x 18cm) until flat and level.

Bake for 18 - 20 minutes until just cooked and just firm.

Whilst the base cooks, whip the egg whites in a mixer until soft peaks form, slowly add the extra sugar and continue to whip until all the sugar has dissolved (approx 5 mins).

Gently fold through the coconut trying not to knock out to much air.

Remove the base from the oven and spread the jam over the top.
Spread the coconut mix over the top and return to the oven for a further 6-10 minutes.

The top should be slightly brown and very crisp.

*Allow to cool then cut into squares or rectangles.
