A naughty salad that will delight everyone.
The secret to a good potato salad is lots of hard boiled eggs. We are lucky because we have our own chickens who lay at least 12 eggs a day, so I can afford to be generous with the eggs. Potato salad has always been a popular BBQ accompaniment, a tasty side dish and a guilty delight during holiday season. You can add whatever you like to this creamy dish; from roast chicken to bacon, to corn or gherkins for that extra bit of zest. No matter what you add, the texture is the most important element. I choose to thicken mine with mayonnaise or sour cream, and sometimes both for that extra bit of satisfaction.

Makes: 12 servings
Ingredients
7 medium potatoes
5 hard-boiled eggs
A handful of gherkins
1 tablespoon of capers
3 tablespoons of mayonnaise
3 tablespoons of sour cream
A handful of dill
5 rashes of bacon
Method
Boil the potatoes until soft.
Bake the bacon in the oven until crispy.
Dice gherkins and dill and place in a large bowl.
Add diced bacon, potatoes and eggs cut in chunks.
Stir in the mayonnaise and sour cream and gently combine.
Season with salt and pepper.
Serve up and garnish with extra dill.
