No-fry Egg Rolls

This is a healthy breakfast option. You can have the carbohydrates, proteins and veggies, all in a tasty combination. It is also a great snack for kids' lunch box.



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 rolls (adequate for 1 person)

Ingredients
For the roti
1/2 whole wheat flour
Pinch of salt
Water
Few drops oil

For the omelette
2 eggs
Pinch of salt and pepper

Veggies
Grated carrot
Grated cabbage
Finely chopped onion, tomato, celery, coriander

Sauces
Tomato ketchup
Chili sauce
Mustard sauce
Soy sauce
Mayonnaise(optional)

Oil



Method
To make the roti dough
Add salt to the flour. Add water, a spoonful at a time to form a soft dough. Coat with little oil and keep aside.

To make the omelette
Break an egg in a bowl. Add salt and pepper and whisk till combined.

Cooking and assembling the rolls
Make 2 balls of the dough. Roll out a roti with one. Keep a pan to heat. Roast the roti on both sides. Keep aside.

In the same pan, smear little oil or butter. Pour the egg and cook the omelette. Flip to the other side and cover with the roti that was kept aside. While removing from the pan the omelette will be stuck to the roti.



Take the veggies in a bowl. Add the sauces as per taste. Taste and check for seasonings.

Lay the roti in a plate with omelette facing upwards. In the centre, arrange the vegetable mixture in a line. Now roll the roti. Wrap in a paper napkin.



Enjoy these healthy egg rolls with your family. Alternatively, cut into bite-size pieces for kids
