Not Your Average Porridge

I've always been baffled by people who don't like porridge. What better way to evict the morning groggies than with a seriously delicious, hearty happy healthy breakfast? (Alliteration intended)



This particular porridge has all the punchy body-love plus a lovely flavour and texture. All of which means you might want to stop buying cereal and start making it!

Preparation Time: 5 minutes (make the night before)
Cooking Time: 2 minutes
Makes: 1 serving

Ingredients
1/2 to 3/4 cup quick oats
1/4 cup shredded/dessicated coconut
1 tablespoon sunflower seeds
Water
Milk
Sultanas (as many as you like!)
Dried cranberries (ditto)
1 apple

Method
Combine oats, coconut, sunflower seeds with 1/4 cup of milk and enough water to cover everything.

Cover and leave to soak overnight.

Uncover, add sultanas and about 2 tablespoons of milk and stir.

Microwave for 1 minute.

Remove and stir then microwave for a further 30 - 50 seconds. This depends on how you like it, really!

Chop the apple (avoid waste! either use the whole apple, save the leftovers, or only add apple if you're serving 3 - 4 people) and add with the cranberries.

Stir, add milk to taste and enjoy!

Optional: play around with different ingredients - try some other grains, dried apricot, fresh fruit, honey, pearl barley, a little museli, the options are endless. I love this with Greek yoghurt and a little strawberry jam.
