Nutty French Toast With Homemade Jam

French toast is the perfect dish for a lazy weekend breakfast at home. It's easy to make and very versatile. Top with bananas, berries, peanut butter dip, or go for a savory option such as cheese or tomatoes.



For today's french toast I opted to use walnut and raisin sourdough with homemade quince jam and blueberry jam.

Preparation Time: 5 minutes
Cooking Time: 6 minutes
Makes: 1 servings



Ingredients
2 slices of nut and fruit sourdough
2 free range eggs
1 tsp vanilla essence
1 dash of cinnamon
1 tbsp milk
1 tsp butter
1 tbsp blueberry jam
1tbsp quince jam



Method
Whisk the eggs, vanilla, cinnamon and milk in a shallow bowl then soak the bread.

Once the eggy mixture is absorbed and the bread soaked through put a non stick pan on a medium high heat.



Drop as little or as much butter in as you like. Once melted carefully place the eggy bread into the pan.

Flip at about 3 minutes and cook the otherside. This time will vary depending on how thick your bread it. You want the outside to be golden and crisp.



Once cooked remove from the heat and plate up. Top with jams, cream, yogurt, fruit or just a dribble of honey.



NOTE: For savory french toast omit the vanilla and replace the cinnamon with a dash of salt! I like to top savoury french toast with avocado, cheese or vegemite.
