Oaty Choc Chip Cookies

A timeless classic with a twist.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: about 30 biscuits


125g butter, softened
1/2 cup caster sugar
1/2 cup brown sugar
1/2 tsp vanilla extract
1 egg
1 1/4 cups rolled oats
1 cup self raising flour
1/2 tsp bicarbonate soda
pinch salt
175g choc chips or dark chocolate, chopped
100g walnuts, roughly chopped (optional)


In a large bowl, beat butter, sugars and vanilla with an electric mixer until pale and thick. Beat in egg until combined.

Beat together the butter and sugars before adding the egg

Add oats, then fold in sifted flour, soda and salt until completely incorporated. Fold through chocolate, and nuts if using.

Use a wooden spoon to gently fold through dry ingredients

Roll tablespoons of dough into balls and place onto a greased baking tray. Flatten slightly and allow room for spreading between biscuits during baking.

Allow room for the biscuits to expand while cooking

Bake in a preheated moderate oven (170 degrees fan forced) for about 10 minutes or until golden. Biscuits will feel soft upon removing from oven, but will crisp as they cool.

Enjoy with coffee or keep handy as an after school snack


The walnuts add texture to the biscuits, but may be omitted for a nut free recipe. Try replacing with roasted hazelnuts for a different flavour.
