Oh So Omelette

Do you like happy eggs? Here is an easy, yummy recipe for an omelette for either breakfast, lunch or maybe a small dinner.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
3 eggs
Some almond milk
3-4 sun dried tomatos
1 canned shredded chicken (tandoori)
Salt & pepper


Method
Start with cutting the sun dried tomatoes in small pieces.
Mix three eggs in a separate bowl.
Add some almond milk, salt and pepper to the eggs and mix a little more.
Pour the mixture into a warm pan.






After a minute or two you can add the chicken from the can and spread it over the egg in the pan.
Then spread the cut tomatoes and cover it up with some aluminum foil. (Remember to not have too high a temperature or else you will burn the egg before it is thoroughly cooked).







If you want you can eat it with a crisp or normal bread or just as it is. Just like me you can also top it with some pesto and cream cheese, enjoy!
