Ingredients 1 cup lightly packed brown sugar
1 cup chopped dates
60g butter, cubed or sliced
1 cup boiling water
1 teaspoon bicarbonate of soda
1 3/4 cups self-raising flour
2 teaspoons vanilla essence
Preheat oven to 180 degrees.
Place chopped dates, sugar and butter in a large mixing bowl.
Pour boiling water over ingredients, stirring until the butter has melted.
Add flour and bicarbonate of soda, mixing well.
Add vanilla essence.
Pour ingredients into well greased loaf tin.
Bake for 45 minutes or until skewer inserted into the centre comes out clean or with a few crumbs attached.
Leave in tin for few minutes out of oven to cool before turning out onto cooling rack.
Delicious straight out of the oven with butter - although careful when cutting it as it might crumble due to freshness. It will cut better the next day.
