Ingredients 4 - 6 chicken pieces, skin on (thighs, drumsticks or breasts)
1.5 - 2kg new potatoes
Vegetables (personal preference)
1 whole bulb of garlic
Fresh herbs to taste (I use sage)
Pepper and salt to taste
Insanely Healthy Concentrated Vegetable Stock or stock alternative of your choice
Cut potatoes into bite size pieces and place in a heavy based pot that is suitable for oven and stove top. Cover with water, add butter and stock. Simmer until just cooked.
Drain most of the water but leave about an inch in the bottom. This helps keep the chicken moist.
Place garlic and herbs amongst the potatoes.
Place vegetables in pot on top of potatoes, place chicken (skin up) on top.
Drizzle with olive oil, grate lime rind on top and throw on some sea salt and pepper.
Bake at 200C for 15mins then turn down to 180C until the chicken is cooked.
