Orange Poppy Seed Muffins

A fresh and fruity muffin, perfect for afternoon tea or with a dollop of cream for dessert.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 12 servings

2 1/2 cups self-raising flour
3/4 cup caster sugar
125g butter, melted
2 eggs, lightly whisked
3/4 cup milk
2 tsp finely shredded orange rind
60ml (1/4 cup) fresh orange juice
1 tbs poppy seeds
Icing sugar, to dust

Preheat the oven to 180 C. Line the patties of a cupcake baking tray.

In a microwave safe mixing bowl, place the butter and heat it on high for 40-60 seconds to melt the butter.

Add the eggs to the butter and whisk until combined.

Whisk through the milk into the butter and egg mixture.

Add the flour and caster sugar.

Mix well to combine into a smooth batter.

Stir through the poppy seeds.

Fill the cupcake patties with batter.

Bake for 20-25 minutes, or until cooked through when tested with a skewer.
