Oranges in Honey Rose Syrup

This is a refreshing dessert for hot Summer days and nights. It's also good as a light and tangy follower for rich main courses. It's easy and quick to prepare if you're short of time and uses ingredients you're likely to have available in your kitchen. If you don't have rosewater on hand, it can usually be found in supermarkets, health food stores and Asian grocery stores.

Preparation Time: 15 minutes
Cooking Time: 40 minutes (note this includes chilling time)
Makes: 4 servings

5 oranges
1/3 cup sugar
1 tablespoon honey
1 teaspoon rosewater (or to taste)

Juice one of the oranges and put the juice in a small saucepan

Add the sugar and honey to the juice in the saucepan and heat gently, stirring until sugar is dissolved and syrup begins to thicken

Remove from the heat and allow syrup to cool before adding the rosewater.

Peel and slice the remaining four oranges, place in large serving bowl or divide between smaller individual serving bowls.

Pour the syrup over the sliced oranges, cover and chill in the fridge for at least 30 minutes before serving.

The syrup will thicken a little more when chilled. The quantity of sugar can be varied if you prefer a heavier or lighter syrup.
