Ingredients 150 grams of brown rice
Half a can of kidney or other beans
1 spring onion
Spices to taste, my recommendation for an oriental twist is to add some sesame seeds, curry powder, a tad of cumin and salt and pepper.
Heat up a pot of water for the rice to boil in. Meanwhile chop the vegetables into small pieces. Once the water in the pot is bubbling, add the rice.
Begin frying the onions and tomatoes as well as a few pinches of spices on medium heat once the rice has been in the pot for around 15 minutes. It should be ready to add to the frying pan after a total of about 20 - 25 minutes.
Add the rice and beans to the pan and turn up the heat to get the rice nice and crispy. Cook to taste and serve with some sesame seeds as well as spices and herbs sprinkled atop. Bon appetit!
