Oven Fried Chicken Chimichangas

This is a healthier way to serve chimichangas as they are baked instead of the traditional way of deep-frying them.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 4 pieces

Ingredients
to cup enchilada sauce or salsa
2/3 tsp cumin, ground
1/3 tsp dried oregano
1 cups cooked chicken, chopped
2/3 cup cheese, grated
2 spring onions, chopped
6 flour tortillas
1 1/3 tbsp margarine, melted
Cheese, grated, to serve
Spring onions, to serve - optional
Picante sauce, to serve - optional

Method
Mix the chicken, sauce or salsa, cumin, oregano, cheese and spring onions.

Put about a bit more than cup of the chicken mixture in the centre of each tortilla.

Fold opposite sides over filling.

Roll up from the bottom and put them seam side down on a baking sheet.

Brush with the melted margarine.

Bake at 200/180 fan forced for 25 minutes or until they are golden.

Garnish with the additional cheese and spring onion and serve with sauce on the side.
