Pack-Ahead Meal: Veggie-Fresh Quinoa With Tomatoes, Cucumber & Capsicum

Always feel like you're rushing around? Here's a quick and easy pack-ahead quinoa meal that's delicious, healthy and light on the palate (and calories).

Veggie-fresh quinoa with tomatoes, cucumber and capsicum


Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 1 serving

Ingredients
1 portion cooked quinoa
1 large tomato
1 mini yellow capsicum
1 mini cucumber
1 hard-boiled egg (optional)
Cracked black pepper
Cracked sea salt

Method
Chop up tomato, cucumber and capsicum into small pieces. Drain liquids.
Tomato, cucumber and capsicum offer a chock full of vitamins.


Place cooked quinoa into an air-tight lunch container.
Cooked quinoa


Mix veggies into the quinoa.

Crack black pepper and sea salt to taste.

Keep refrigerated until ready to eat.
Hearty and healthy quinoa lunch.
