For when you want to do something that looks fancy, but is in fact a breeze to make. If you've got time on your hands then cool, just under an hour and a half and your meal is done.

Ingredients
1 Chicken thigh
Thyme sprig
1 tblsp honey
1 tsp soy sauce
1 tsp tomato puree
coconut oil
1 onion
Half a yellow and red pepper
1 potato
3 cherry tomatoes
Method
Pan fry the chicken; sear it all over. This should take no more than 5 minutes with the heat to medium-high.
Remove the chicken from the pan and put it in the oven with dessicated coconut thyme honey ginger soy sauce and tomato puree, for an hour, at 160 degrees, (gas mark 3).
While the chicken is cooking chop the potato into cubes and pan fry for 10 minutes in coconut oil. Add the chopped onions n peppers and cook on a medium heat for another 10 minutes until the onions and peppers have softened.
Fry the chopped tomatoes in a seperate frying pan for 5 minutes in coconut oil
Remove the chicken from the oven. Arrange the fried vegetables on a plate and add the chicken thigh.
Roughly chop the raw spinach and arrange on the side of the dish.
Enjoy your lunch/dinner.
