Pan Fried Veggie dumplings are a good option for a delicious evening snack. It would surely be loved by people of all age groups and could also be used as an alternative food for the kids who are fussy about having vegetables as part of their diet.
Ingredients Finely chopped vegetables like, carrot, green peas, cauliflower, French beans and spinach (you may add additional veggies of your own choice to make the dish even healthier)
1 cup Semolina
1/2 cup corn flour
2 Cheese slice or half cup grated cheese
1 cup oats
Oil for frying
1 tsp seasonal mixed herbs
1/2 tsp pepper powder
Salt to taste
Add 1tsp oil to a thick bottom pan and put it on a slow flame. Add all the chopped vegetables to the pan and sauté it for 1-2 minutes.
Now add the mixed herbs, oats, crushed cornflakes, pepper powder and pinch of salt. Let the mixture cook for around a minute, then add semolina and mix all the ingredients nicely. (Adding Oats and semolina would help to bind the mixture)
Add half cup of water to the above mixture for every cup of semolina added. Put a lid on the pan and reduce the flame. Let the semolina and vegetables cook for some time.
Now add the ‘grated cheese’ or ‘cheese slice pieces’ and mix it nicely and let it to cook for 2-3 minutes.
The mixture would turn into soft dough, which would be used to make dumplings.
Preparation of dumplings
Take the dough (prepared in the above step) and make small ball dumplings with the help of your palm.
Now take corn flour and add a little water to make a paste.
Take a little oil in a pan and place it on a medium flame. In the mean time dip the dumplings in the corn flour paste.
Fry the dumplings (wrapped in corn flour paste), till they become crispy and golden brown in color.
Transfer the fried balls on the tissue paper to remove the excess oil.
Serve the veggie dumplings hot and relish them with tomato ketchup or mint chutney.
