Pandan Chiffon Cupcakes

Pandan has been widely known as the Asian Vanilla. Pandan chiffon cakes are widely available in Singapore. Putting them in cupcake tins bakes much faster and you won't have to fuss about cutting them into slices! These pandan chiffon cupcakes are quick and easy to make. They rise up high while baking and would form cracks which will close up once they are cooled. They smell delicious once they are out from the oven and it is best to eat them hot!

Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 10-11 medium cupcakes

Group A:
65g of coconut milk
3 drops of green pandan essence

Group B:
60g of egg yolks (about 3 eggs worth)
25g of caster sugar
50g of vegetable oil
80g of self-raising cake flour, sifted

Group C:
150g of egg white (about 4 eggs worth)
60g of caster sugar

Preheat oven to 200C.
In a small bowl, combine ingredients from Group A and mix well.

In a large bowl add in egg yolks and caster sugar from Group B. With an electric mixer, beat eggs and sugar till pale.

Add in oil to egg mixture and mix well.

Add in Group A mixture to Group B and mix well. (Mixture AB)

Sift in flour to Mixture AB and mix till well combined, set aside.

In a clean and dry mixing bowl, beat egg whites from Group C with a clean and dry whisk.

Whisk till bubbles starts to form and gradually add in caster sugar from Group C

Carry on beating the egg whites and stop right at the firm peak stage. (Mixture C)

In 3 batches, add in 1/3 of Mixture C into Mixture AB and gently fold in mixture to mix well. At the end of the third batch make sure to scrap side of the bowls to ensure an even mix.

Lift up the bowl and give in a few knocks on the table to remove air bubbles.
Evenly distribute mixture into individual aluminium cupcake moulds.

Put them into the oven for abour 15-20 minutes depending on the size of your moulds.

Bake till top of cakes are golden brown.
Take them out and place them on a wire rack to let it cool for 5 minutes and unmould carefully.
