Parsnip & Sweet Potato Fry Up

parsnip, sweet potato, onion, fry up


Sweet potatoes and parsnips go very well together as part of a mixed veg selection because they are both sweet, but carry distinctly different flavours. You can make them into an exciting vegetable side dish very easily.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 3 servings

Ingredients
1 sweet potato
1 parsnip
brown onion
1 tbsp olive oil
1 tsp ground mixed herbs

Method



parsnip, sweet potato, onion, fry up


Chop all the vegetables and fry them in olive oil until they are soft enough to prod a knife through.
Stir in the mixed herbs.

Serve as part of a main meal.
