Makes: Serves 4 to 6 people
Ingredients Mini Green Cabbage (use any variety except red cabbage)
One clove of garlic
Three tablespoons of extra virgin olive oil
One tablespoon of powdered vegetable stock
Shred or cut a whole head of mini cabbage
Dice two carrots
Fry up a clove of garlic, cabbage and carrots on extra virgin olive oil until soft
Add black pepper and powdered stock. Fry until cabbage caramelises.
In a separate sauce pan, boil 500g of pasta.
When the pasta is cooked, mix through the cabbage and carrots. Season with olive oil.
