Pasta with Sausages, Tomato and Greens

This is a hearty and delicious meal, great for a cold Autumn night. Instead of cooking the sausages and asparagus in the oven, you could cook them in the pot before adding the garlic and tomato, which would save a bit of time.



Pasta with Tomato, Sausages and Greens


Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 4

Ingredients
400g pasta
1 tbsp olive oil
2 cloves garlic, finely chopped
2 400g tinned tomatoes
2 bunches asparagus
Small handful green beans, roughly chopped
50g baby spinach leaves
6 beef sausages

Method
Preheat the oven to 180C.
Place the sausages on an oven tray and put in the oven for 40 minutes, turning after 20 minutes, or until cooked through.
Break off the ends of the asparagus and add to the sausage tray for the last 10 minutes.
Meanwhile, heat the oil in a pot over low to medium heat. Add the garlic and cook for 1 minute, then add the tinned tomatoes. Bring to a simmer and cook for about 10 minutes.
Add the green beans to the sauce for the last 3-5 minutes. Take the sauce off the heat and stir through the baby spinach.
At the same time, bring a pot of water to boil. Add the pasta and cook until al dente.
When the sausages and asparagus are cooked, chop the asparagus into thirds and the sausage into bite size pieces. Add to the tomato sauce and mix well.
Serve the pasta in individual bowls and top with the sauce.
