Ingredients 1/2 cup unsalted butter
1/2 cup peanut butter
1/2 cup caster sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon powder
Strawberry jam (Or any other jam)
Preheat oven to 190°C and line baking trays with baking paper.
In a large mixing bowl, combine butter and peanut butter using an electric mixer. Combine until smooth.
Mix in caster sugar and brown sugar until sugars are evenly distributed.
Mix in egg and vanilla extract.
Sieve flour, baking soda and salt into the mixture and stir using a wooden spoon.
Stir in cinnamon (to liking).
Distribute the dough evenly to make 24 cookies.
Using your finger or teaspoon, create an indentation in the middle of each cookie (about the size of a 10-cent coin) and fill it up with jam.
Bake the cookies for 10-15mins or until cookie turns golden brown.
Cookies will initially have a chewy texture, but hardens as it cools on a rack.
