Ingredients For the peanut butter chocolate chip cookies 1 cup smooth peanut butter
1/2 cup honey
1 egg, beaten
1 tbsp vanilla essence
1 tsp baking powder
1/4 cup chocolate chips (or cocoa chips)
For the hot chocolate fudge dipping sauce 1/2 cup cocoa or cacao
1/4 cup sugar (1/2 cup if you prefer it sweeter)
1/2 cup milk
1 tsp vanilla essence
2 tbsp butter
1/4 tsp salt
Method Peanut and chocolate chip cookies
Preheat the oven to 200 degrees. Line 2 baking trays with baking paper.
Place the peanut butter, honey, vanilla essence, salt and butter into a bowl and stir until combined.
Add the egg and stir until combined. Add the baking powder and stir until combined.
Combine the peanut cookie mixture well
Divide the mixture in half, set aside one half. Combine the chocolate chips into one of the mixtures.
Using a spoon, drop teaspoon sized drops of the cookie dough onto a baking tray, evenly spacing them to allow the cookies to spread. Press a peanut gently into the centre. Bake for 12 - 15 minutes or until golden brown. Cool on wire racks.
The peanuts in the centre of the cookie give a nice crunch
Half of the cookies will have chocolate chips and half will not, double the chocolate chips if you want all with chocolate chips
Hot chocolate fudge dipping sauce
Stir milk, sugar and cocoa in a saucepan on medium heat, until the sugar is dissolved and it comes to a boil, 2 - 3 minutes.
Cacao works well in this fudge sauce
Stir in butter for 2 - 3 minutes.
The butter will thicken the sauce
Add vanilla extract and salt. Pour into a serving dish for dipping.
Place cookies on a serving platter with a dish of hot chocolate fudge sauce for dipping. Enjoy.
