Peanut Butter Chicken Stir-Fry

This dish is probably the most more-ish and all round winning of our regular collection. Fortunately it only takes half an hour to prepare and cook, so it is perfect for that desperate rush to satisfy the family.



But don't expect any to be left over!

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 4 servings (including the inevitable second servings!)

Ingredients

500g chicken/ turkey/ pork mince (as desired)
1 long red chilli, chopped
2 tbsp peanut oil
225g corn cuts
225g water chestnuts
225g bamboo shoots
1/4 cup crunchy peanut butter
1/4 cup soy sauce
1/4 cup sweet chilli sauce

250g udon noodles/ 1 cup brown rice (choose as preferred) to serve


Method
Prepare the noodles or rice according to packet instructions.
Combine peanut butter, soy and sweet chilli sauce and 1/4 cup of water. Mix well.



In a large wok, heat the peanut oil. Add the chicken/turkey/pork mince and chilli, and cook until brown. Remove from wok.



Stir fry the corn, water chestnuts and bamboo shoots for 2-3 mins, then return the mince to the wok.
Add the peanut butter mixture to the wok, mixing through the vegetables and meat until well combined. Allow to simmer for 2 mins and then take off the heat.
Divide noodles or rice between bowls and top with the stir-fry. You can also add toasted peanuts to serve, and a sprinkle of fresh coriander.
