Peanut Butter Protein Fudge

These little fudge bites are a great pick me up that pack a punch of protein and healthy fats. Make in bulk and always have on hand when you need a sweet treat or a pre-workout snack.



Preparation Time: 5 minutes
Cooking Freeze Time: 60 minutes
Makes: 18 servings

Ingredients
1 cup vanilla protein powder
1/4 cup coconut flour
1/4 peanut butter
1/2 cup plus 3 tbsp almond milk
2 tbsp coconut oil
4 tbsp maple syrup

Method
Line either a small loaf tray with baking paper.
Place all the ingredients in a bowl and mix well. (If it is cold and the peanut butter and coconut oil are solid warm in the microwave until they are runny and stir in).

Mix well until a dough is formed. You want the mix to be thick, almost like brownie batter.
Press the dough evenly into the lined pan.

Freeze for one hour or until fudge has hardened.
Remove from the freezer and cut into chunks.
Enjoy!
