These chocolate chip cookies are very versatile. You can use milk chocolate or dark chocolate, peanuts or walnuts.
Ingredients 150 g butter at room temperature
1 3/4 cups plain flour
1/2 cup brown sugar
1/2 cup caster sugar
1/2 cup of roasted peanuts
1/2 cup dark chocolate chips
1 teaspoon vanilla essence
1 large egg
Preheat oven to 180 degrees.
Line 2 baking trays with non-stick baking paper.
In a large bowl, cream the butter, brown sugar and caster sugar.
Add the vanilla and the egg then continue to beat until smooth and creamy.
Put in the peanuts and chocolate chips.
Sift in the flour then mix with a spoon until it is well combined.
Roll tablespoons of the mixture into balls and flatten slightly. Place onto trays allowing a little room to spread.
Put in the oven and bake for 15-20 minutes, until golden brown. Cool on a wire rack.
