Peanut Satay Sauce

I love peanut butter so finding another recipe calling for the nutty paste is a win in my books. Making your own satay sauce is satisfying and easy. Bang all the ingredients in a pot and you are half done.

Slathered on Chinese Broccoli.


Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 185 ml (2 generous serves)

Ingredients
1 teaspoon oil
1/2 small brown onion
1 garlic clove
1 small fresh red chilli
1/3 cup peanut butter
1/3 cup water
2 tablespoon fresh lemon juice
1 teaspoon balsamic vinegar
1/2 teaspoon brown sugar



Method
Heat oil in a saucepan over a medium heat. Add diced onion and stir for 5 minutes until soft and golden.

Add the crushed garlic and chopped chilli and cook for 1 minute or until aromatic. Turn down the heat.

Add the peanut butter and stir until melted.



Add water, lemon juice, vinegar and sugar. Heat stirring until the sauce thickens, it will only take a few minutes. Taste and add more lemon, balsamic or water if needed.



Enjoy on skewers, in stir-frys or with rice.

Mixed in a vegetarian stirfry.
