Pepita Pesto Pasta

This is not a traditional pesto but, it is much lower in fat and still just as tasty.



Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 2-3 servings

Ingredients
200 grams fusilli pasta
1 cooked chicken breast, shredded
3 rashers bacon, fried and diced
10 baby grape tomatoes, quartered
1/2 red onion, diced
1 bunch basil
2 tablespoons pepitas, (pumpkin seeds)
1 tablespoon olive oil
1 clove garlic
1 tablespoon lemon juice
2 tablespoons orange juice
salt and pepper



Method
Place pasta on to cook as directions require.

Remove basil leaves and place in a food processor.

Add oil, garlic, juices, pepitas and salt and pepper to taste.

Blend to a pesto consistency.



When pasta is cooked, drain and place in a large mixing bowl, while hot, add all ingredients to the bowl with the pesto and combine well.

Place in bowls and serve immediately.
