These Passion fruit Brownies are hands down the best brownies I have ever made. They are rich and chocolatey, the perfect dense yet light texture and have a stunning lingering passion fruit taste that I just can not get enough of.
I did use A LOT of passion fruits in this as I really wanted the flavour to shine through. Before you panic at the price I got a box (well over 60) of passion fruits from my local market for $4, so try yours. If not i'm sure canned is fine too. Make sure you strain the seeds out for both.
These are the perfect brownie for people with egg or dairy allergies, vegans, people watching their weight, and well any one as they are so delicious.
Ingredients 2 cups all-purpose flour
1 cup of sugar of choice (I used half coconut sugar and half maple syrup)
3/4 cup unsweetened cacao or cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1/2 coconut butter
1/2 cup of water
1 teaspoon vanilla extract
20 passion fruits (seeds removed)
Preheat the oven to 175 degrees C.
In a large bowl, stir together the flour, sugar, cacao powder, baking powder and salt. Pour in water, coconut butter and vanilla; mix until well blended.
Finally strain the seeds and stir in the passion fruit pulp. Have a little taste and add more passion fruit as pulp as needed.
Spread the mixture evenly in a 9x13 inch baking pan.
Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny.
Let cool for at least 10 minutes before cutting into squares and enjoying!
