Peruvian Salmon Ceviche

I have a real love for ceviche, and after trying it in a range of restaurants across London I thought I'd make my own. Here's my easy recipe that mimics the Peruvian classic dish.

- For those that have never enjoyed ceviche, it is a raw fish dish, where the fish is 'cooked' through the curing process of citrus juice, typically lime.

Preparation Time: 5 hours
Makes: 2 servings

2 salmon fillets
1 lime, halved
Handful of torn fresh corriander
4 crushed garlic cloves
Half a chopped small red chilli pepper

Place the fish in a suitable dish and add the ingredients.

Alternatively, slice the salmon finely (I prefer it this way as it is much easier to enjoy), and add all of the ingredients to a bowl (no need to stir).

Allow the marinade to work its magic for 6 hours.

The fish should have 'cooked' during this period, as the citrus juice enzymes work their magic on the raw fish.

Serve and tuck in straight away.

Lightly dressed salad works beautifully with this light, healthy dish.
