Pesto Chicken Burger

This is one of my favourite home made burger recipes. There are only a few ingredients, but they work really well together.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 burgers

2 burger buns (I like soft scotch buns)
1 chicken breast
1 tomato
Rocket lettuce
Cajun seasoning

Slice the chicken breast in half so that you end up with 2 large flat pieces.
Cover the chicken in cajun seasoning.
Cook on the BBQ or a grill saucepan.
While chicken is cooking slice up the tomato and wash the rocket.
Slice the burger buns.
If not worried about calories, spread butter/margarine on the buns.
Spread the pesto on the bottom bun.
Place the tomato on top of the pesto.
Once the chicken is cooked (slice open to check) place one piece on each bun.
Add the rocket.
Add mayo to taste.
Remember that the order in which you place the ingredients will affect structural integrity.
Eat while hot.

Slice the breast into 2 fillets.

All the ingredients ready for burger assembly.

Spread the pesto on the base.

Carefully place the tomato on top of the pesto.

Place the chicken.

Then the rocket.

Ready for eating.
